Role Overview:
The Dy. Manager – R&D (Culinary, Frozen & Hotfill) leads culinary innovation and product development for the Frozen & Hotfill portfolio. The role is responsible for transforming consumer insights into scalable, delicious, and cost-effective recipes. It requires a deep understanding of culinary techniques, ingredient functionality, and industrial processes. The incumbent collaborates closely with technologists, manufacturing, Q&FS, and marketing teams to deliver products that are sensory superior, safe, and operationally feasible for large-scale production.
Key Responsibilities:
- Lead the creation, development, and optimization of new recipes for Frozen & Hotfill categories by closely collaborating with customers to understand detailed product briefs and achieve desired sensory targets.
- Travel to customer offices and QSR outlets to conduct product applications, ensuring faster turnaround and effective execution.
- Stay updated on evolving market trends in India and globally to develop innovative product concepts.
- Guide the culinary team in translating kitchen concepts into factory-scalable formulations.
- Conduct trials (lab, pilot, and commercial scale) to validate process feasibility, yield, and sensory consistency.
- In co-ordination with Food Technologists, Collaborate with Manufacturing and Q&FS to ensure smooth technology transfer and process standardization.
- Identify and drive value leadership initiatives through ingredient and process optimization to deliver cost efficiencies in alignment with organizational goals.
- Conduct sensory benchmarking, market evaluations, and product tastings to guide product positioning and improvement.
- Supervise documentation of recipes, formulations, trials, and sensory feedback for traceability and audit readiness.
- Ensure adherence to hygiene, food safety, and regulatory compliance during all culinary activities.
- Drive continuous improvement initiatives in process efficiency, flavor enhancement, and texture optimization.
- Provide mentorship to junior chefs and culinary associates to build functional excellence.
- Work closely with marketing for innovation workshops and consumer co-creation sessions.
- Champion a culture of innovation, collaboration, and accountability within the culinary and R&D ecosystem.
Job Qualification & Experience:
- Bachelor’s or Master’s degree in food technology/ Hotel Management / Culinary Arts from a reputed culinary institute.
- 10+ years of experience in culinary R&D, product innovation, or industrial food development.
- Strong knowledge of cooking methods, ingredient science, and product standardization.
- Experience with Frozen form products (burger patty , appetizers , cheese and paneer based substrate) & Frozen sauces (Indian gravies, emulsions & hotfill sauces ) processes and large-scale food manufacturing preferred.
- Exposure to sensory science, recipe costing, and documentation for process validation.
