The Food Safety and Standards Authority of India (FSSAI) has issued a notice to JW Marriott, Aerocity, Delhi, a unit of Aria Hotels and Consultancy Services Pvt. Ltd., following an inspection that identified multiple food safety, hygiene, sanitation, licensing and labelling deficiencies.
According to the inspection findings, the hotel was found carrying out retail and relabeller activities without the required endorsement in its FSSAI licence, including retailing food products under the JW Marriott brand. Officials also observed deficiencies in the labelling of pre-packaged foods, including misprinted FSSAI licence numbers and failure to declare the complete manufacturer’s address.
Serious Hygiene and Sanitation Concerns
The inspection identified several hygiene-related issues across the hotel’s food preparation and storage areas. These included cockroach and fruit-fly infestations, unclean utensils and food-contact surfaces, poor sanitation and inadequate pest control.
Officials also reported visible particulate matter in drinking water and poor maintenance of food premises. These findings raised concerns regarding the overall safety and hygiene of food preparation areas.
Spoiled Food and Cross-Contamination Risks
FSSAI inspectors found fungal growth on apples and rotten tomatoes, along with uncovered food, damaged storage containers and improperly stored cut vegetables.
The inspection also identified inadequate segregation of vegetarian and non-vegetarian foods and food products not maintained under prescribed storage conditions, creating potential cross-contamination and food safety risks.
Deficiencies Across Multiple Kitchens
The Chinese, Indian, Italian and bakery kitchens were among the areas where deficiencies were recorded. These included pest infestation, non-operational exhaust systems, inadequate sanitation, poor allergen segregation, defective storage containers and improper food identification and storage.
Further issues were noted in the water bottling area, dry store, coffee shop and vegetable preparation area, including a rusting drinking-water storage tank, imported-food labelling deficiencies, poor sanitation and fruit-fly infestation.
Licensing and Labelling Issues
The inspection also highlighted broader compliance gaps involving licensing/KOB compliance, food storage, temperature control, personal hygiene, pest control, allergen management, traceability, maintenance and potable water.
Certain products, including paneer, khoya, chana masala and chilli, were reportedly found without the required licence or appropriate endorsement available for verification.
Food Samples Collected
During the inspection, FSSAI collected regulatory and surveillance samples, including honey, dairy whitener, drinking water, red velvet sponge, rasmalai, khoya, paneer and so(n)th chutney.
The regulator has stated that further action will depend on the hotel’s compliance and the results of laboratory analysis of the collected samples.

The notice requires corrective action on the deficiencies identified during the inspection. Further regulatory action may follow based on the hotel’s compliance response and laboratory test results.
The development comes amid increased food-safety scrutiny of hospitality establishments in Delhi, highlighting that FSSAI compliance, hygiene controls, pest management, food storage, labelling and traceability remain critical even in premium hotel operations.
