Job Title: Assistant Manager – Production (Cakes)

Reports To: Production Manager / Plant Head
✅ Job Purpose:
To supervise and manage the day-to-day production operations of the cake manufacturing unit, ensuring smooth production flow, quality standards, timely output, safety, and efficient resource utilization.
✅ Key Responsibilities:
1. Production Planning & Execution
Execute daily, weekly, and monthly production plans as per business targets.
Monitor production schedules and ensure timely completion of production targets.
Optimize machine utilization and manpower deployment.
2. Quality Control
Ensure that all cakes produced meet the defined quality standards and specifications.
Work closely with the Quality Assurance (QA) team to implement corrective actions where necessary.
3. Team Management
Supervise production staff and provide training for skill development.
Allocate work and monitor performance of production operators and workers.
Maintain discipline and encourage a productive work culture.
4. Process Improvement
Identify bottlenecks or inefficiencies in production process and suggest improvements.
Implement Lean Manufacturing principles where applicable to reduce wastage and improve productivity.
5. Inventory & Resource Management
Manage raw material consumption to avoid overuse or shortage.
Coordinate with the warehouse team for raw material availability.
6. Maintenance Coordination
Ensure regular preventive maintenance of machines to avoid breakdowns.
Liaise with the maintenance team for any urgent machine repair or downtime handling.
7. Health & Safety Compliance
Ensure production team follows safety protocols and hygiene standards.
Conduct regular safety audits and implement corrective actions.
8. Reporting & Documentation
Maintain daily production reports, shift-wise output, and other necessary production documentation.
Report production performance to Production Manager/Plant Head.

✅ Required Skills & Experience:
Bachelor’s degree in Food Technology, Mechanical Engineering, Dairy Technology, or relevant field.
Minimum 3–5 years experience in food or bakery production, especially in cake production preferred.
Strong knowledge of cake production processes, baking parameters, and quality control.
Ability to manage teams and coordinate cross-functional activities.
Strong analytical and problem-solving skills.
Good communication and leadership skills.
Knowledge of food safety standards (FSSAI / HACCP) is a plus.

✅ Preferred Competencies:
Knowledge of automated cake production lines.
Hands-on experience with production planning tools (ERP systems preferred).
Ability to work in a fast-paced production environment.
