A surprise food safety inspection at a McDonald’s outlet located at Gaurav Tower in Jaipur has raised serious concerns over hygiene and food safety practices. Officials from the Rajasthan health department reportedly found cooking oil being used beyond the permissible safety limit during the inspection.
According to officials, the oil used for frying food items showed Total Polar Compound (TPC) levels higher than the allowed maximum of 25%. The oil used for non-vegetarian preparations recorded a TPC level of 28%, while oil used for vegetarian food reached 31%, indicating significant degradation.
What is TPC and Why Does It Matter?
TPC (Total Polar Compounds) is a key indicator of cooking oil quality. Health experts say that when oil is repeatedly heated, harmful compounds can form, potentially increasing health risks. During the inspection, authorities described the oil as “extremely black and unusable,” yet it was allegedly being used throughout the day for frying operations.
Immediate Action Taken by Officials
Food safety officers destroyed approximately 40 litres of used cooking oil on the spot and collected samples for laboratory testing. The restaurant management was instructed to switch to fresh oil immediately and comply with food safety standards.
In addition to the oil quality issue, inspectors also found around 40 kg of rotten tomatoes stored in the cold room, which were disposed of during the inspection.

Officials stated that an improvement notice would be issued under the Food Safety and Standards Act, 2006. Further action will depend on the final laboratory reports and compliance review.
Separate reports also indicated that the outlet received a regulatory warning and was asked to correct the violations within a specified timeframe. ()
