About the Role:
We are seeking a highly skilled and innovative Cheese Expert to lead our Research & Development (R&D) initiatives in the cheese division. The ideal candidate should have a deep understanding of cheese science, process optimization, and product innovation.
This is a core R&D role that combines scientific expertise, creativity, and practical implementation — ideal for someone passionate about creating unique cheese experiences.
Key Responsibilities:
Product Development & Innovation
- Conceptualize, formulate, and develop new cheese products (Mozzarella, Cheddar, Processed, Gouda, Brie, Artisan, and specialty cheeses).
- Conduct experiments, trials, and sensory evaluations to optimize product texture, flavor, and functionality.
- Innovate with cultures, enzymes, emulsifiers, and stabilizers to create differentiated cheese products.
Process & Technology Development
- Design and standardize processing parameters (temperature, pH, coagulation, stretching, ripening).
- Collaborate with production teams to scale lab trials to pilot and commercial levels.
- Identify and validate new equipment, technologies, and automation solutions for cheese processing.
- Optimize yield, cost efficiency, and quality consistency through process improvements.
Quality & Compliance
- Define and implement quality control parameters and analytical methods for R&D and production.
- Ensure all formulations comply with FSSAI and international food safety standards.
- Document experimental data, formulations, process conditions, and results in detailed R&D reports.
Desired Candidate Profile
- B.Tech / M.Tech in Dairy Technology, Food Technology, or Food Science.
- 5–8 years of hands-on experience in cheese product development and process innovation.
- Strong technical knowledge of cheese chemistry, microbiology, starter cultures, and aging processes.
- Proven track record of developing and commercializing cheese products.
- Familiarity with pilot-scale and industrial cheese-making equipment.
- Passion for research, innovation, and continuous learning in dairy science.
